Bread can be eaten alone or as a carrier for other foods, such as luncheon meats. For many generations, white bread was considered the preference of the rich, while the poor ate primarily the dark breads.
Many of the southwestern tribes have the common tradition of serving Indian fry bread, but it was the Navajo Indian who developed the recipe. Indian fry bread is a sacred tradition to some, and it must be eaten until the earth is once again pure. Indian fry bread is also the foundation of a popular dish known as Navajo Tacos which have a foundation of Indian fry bread, beans or ground beef, chopped lettuce, sliced tomato and shredded cheddar cheese. Indian tacos are a universal powwow food and it is also a popular attraction at many fairs and festivals in the southwest.
Amish friendship bread is starter bread. You make your bread from it, and then give your friends a sample of the dough, and they use it to make their bread, and so on. It is made in a glazed ceramic or plastic bowl, and metal spoons or equipment are never used in the processing. Amish friendship bread is a type of sourdough bread and the starter is a substitute for yeast. The starter can be used to make many types of yeast-based breads. Amish friendship bread starter can easily be created from scratch using a regular package of bakers yeast and the ingredients required to maintain. The starter is maintained by adding sugar, flour and milk to it every few days. Amish cinnamon bread is an example of one of the breads that can be made from this starter. It is a quick-bread that contains a substantial amount of sugar, vegetable oil and cinnamon flavoring.
Naan bread is a round flatbread made from white flour. It is a staple accompaniment served with hot meals in southern and central Asia. Naan is an important part of the meal, and the meal is not complete without it. In central Asia, Naan is literally translated as bread. Naan is like pita bread, and is leavened with yeast. Unleavened dough is used as well and it is very similar to that used for roti. A typical Naan Bread recipe would call for white flour, salt, yeast and enough yogurt to make a soft elastic dough. Once it has risen it is divided into ball weighing about 3 ½ ounces each and then flattened and cooked. Raisins or spices cann be added to naan to give it flavor as well.
